Artisan Chocolates, Fall 2011


Dark Chocolate Collection - 


Chocolate Truffle 
A traditional bonbon made with dark chocolate, cream, and a hint of cognac.  This soft, melt in your mouth, truffle is finished with a dusting of dark coco powder.


Truffle à l'Orange
Dark and creamy chocolate ganache finished with orange liquor.



Habanero
Lively habanero chilli, rich cream and dark chocolate.  Enrobed in dark chocolate.

Port Ganache
Locally crafted port from our neighbors at Coelho Vineyards, blended with a medium dark (52.9% cacao) chocolate and enrobed in dark coverture.

Kona Coffee
A flavorful dark chocolate ganache made with fresh cream and coffee beans from the slopes of south Kona.  When possible, we use coffee from my brothers family "coffee ranch," in Captain Cook, Hawaii.

Palet d'Or
A dark chocolate ganache finished with cognac, hand cut and dipped in rich dark chocolate and topped with edible gold.

Lemon Mint Ganache
Lemon zest and mint in fresh cream blended with white chocolate and enrobed in rich dark chocolate.

Lavender
Home grown lavender is blended to create a memorable dark chocolate ganache, enrobed in dark chocolate.

Cinnamon Marzipan
Milk chocolate and cinnamon ganache with marzipan.

Peppermint
White chocolate and peppermint

Caramel
Rich and dark caramel  (also available as orange caramel, with or without pecans)

Cherry Cordial
Oregon cherry and fondant

Cerisette 
Fresh cherries are marinated in Kirsch and Oregon Pinot Noir over the summer.  They are hand dipped in fondant and dark chocolate (seasonal)



Milk and White Chocolate Collection - 


Chai Tea
Fresh cream infused with dark tea with the aromas of cinnamon, cardamon, cloves, and ginger.  Enrobed in milk coverture.


Peanut Butter Cream
Creamy peanut butter, vanilla, and a touch of maple, enrobed in milk chocolate.  A new spin on our childhood favorite.


Caramel Chocolate Ganache
Home made caramel - milk chocolate ganache, enrobed in milk chocolate.

Caramel
Creamy home made caramel (also available as orange caramel, with or without pecans)

Earl Grey
Earl Grey tea with whole milk and dark chocolate.

Cherry Cordial
Oregon cherry and fondant.

Cherry Kirsch Ganache
White chocolate blended with Oregon cherries and Kirsch liquor. Enrobed in white chocolate.


Caramel Pumpkin
Home made caramel, roasted pumpkin and milk chocolate.


Chocolate Malted
Old fashion malt, cream, and milk chocolate


Hazelnut Truffle
Toasted Oregon hazelnuts and Gianduja, rolled in toasted hazelnuts.


Rosemary Bonbon
Home grown rosemary with cream, blended with a melange of white and dark chocolates.  Enrobed in white chocolates. 






Confections -


Pecan Crunch Toffee
Buttery toffee coated with dark chocolate and roasted pecans


Macadamia Nut - Kona Coffee Toffee
Rich toffee, Kona coffee, enrobed in milk chocolate


Pâte de Fruit
Cane sugar and fresh fruit with natural pectin.  Quite a treat!
 Pear, Apple, Passion Fruit (from our family in Hawaii), Blueberry, Strawberry, Marionberry, Grape, and Pineapple.

Shipping is extra.
Because of the sensitivity to warm temperatures, we prefer not to ship until the ambient temperature is less than 60F, unless next day with ice is selected.
